A vegan take on a Thai classic. Pad Thai — a stir-fried noodle dish — is made here with carrots, shallots, and garlic. The veggies are quickly stir-fried, then cooked in an umami-rich pad Thai sauce (featuring tamari, tamarind paste, lime, and coconut nectar). It’s all tossed with brown-rice noodles and seared tofu. Chopped peanuts add a gentle crunch on top.
